LAMBSQUARTER Chenopodium album

Description: Plant

Text Box:  Branching, upright weed, 2-3 feet tall; triangular or oval leaves; single stem with many branches; pale green flowers clustered in dense spikes near top of stem.

 

Habitat:

Rich, disturbed soils, gardens, "wastelands."

 

Uses:

Lambsquarter is a very nutritious and choice vegetable. The entire plant can be steamed; the leaves can be cooked like spinach. The seeds may be served as cereal, in soups or ground into flour. It is also good food for small livestock.

 

Special Harvest or Processing Comments:

For the purpose of gathering lambsquarters as a botanical, do not gather seeds with the leaves. Dry carefully, as the leaves are delicate. Strawberry blight (Chenopodium capitatum) is related to lambsquarter, so be sure to differentiate.
